The V2 Chef Knife builds on the trusted performance of our original chef knife, with subtle refinements to balance, geometry, and finish. The result is a smoother, more responsive blade that feels precise and controlled in hand.

This limited run features a handle made from stabilised purple curly birch, a rare figured hardwood known for its tight grain and dimensional stability. The stabilisation process improves resistance to moisture and movement, making it well suited to kitchen use. Each handle shows natural variation in pattern and tone.

Fusing Western versatility with Japanese-inspired design, the V2 retains the signature octagonal handle and all-round capability that defined the original - now offered in this limited material.
